Saturday Special – Prime Rib Dinner
Erv's began serving Prime Rib in the 1980’s with the purchase of our first Cook & Hold Oven from Alto-Sham in Menomonee Falls, WI. Over the past 36 years, we have maintained the same meticulous preparation process. We use a boneless Choice Ribeye, typically weighing between 15 and 20 pounds. On Friday evenings, we expertly season the roast with our signature sauces and spices before slow-cooking it overnight. The Alto-Sham Oven tracks the roast’s internal temperature to ensure it is cooked to a perfect rare finish.
When a Prime Rib is ordered, Chef Mario carefully slices a portion from the roast and finishes it to the customer’s preferred temperature. Each week, we typically prepare and serve between two to three roasts. Should we have any remaining, the roast is thinly sliced for our renowned Prime Rib Sandwich, which has earned a reputation as one of the finest beef sandwiches in town.
